Lord Nelson’s Prosciutto
Ingredients

For 4 people - 300 g frozen puff pastry - Flour - 2 egg yolks - 1 kg cooked ham, in a single piece - 2 tablespoons of sour cream - 1 tablespoon of marmalade - Cayenne pepper - 2 tablespoons of milk

Process

Defrost the puff pastry, then roll it out on a floured surface in a rectangular sheet 50x30cm; brush with the egg yolk. In a cup, mix the sour cream with the marmalade and a pinch of Cayenne pepper; brush the ham with this mixture and place it on the pastry.

Cover with the pastry, to form a pasty and brush with egg yolk and milk, blended together in a cup.

Cut three small holes in the surface of the pastry and insert small rolls of parchment paper, so that the steam can escape better while cooking.

Moisten the oven plate, place the ham on it and put it on the middle shelf of the preheated oven. Let it bake for 35 minutes at 240°C, then remove from the oven and serve it still hot on an oval serving plate.
