Metternich cooked ham
Ingredients
For 4 people - 4 slices of ham, each 1/2 cm thick - 4 eggs - 50 g butter - 1 tablespoon of meat extract - 1/2 cup of water - 1/2 cup of Marsala - Salt and pepper q.s.
Process
In a large pan, melt a knob of butter, add the spoon of meat extract diluted in water and Marsala and let the liquid simmer for a quarter of an hour.
Place the slices of ham in this sauce and cook over a very low heat for another 10 minutes.
In the meantime, prepare, using the remaining the butter, four fried eggs and then place an egg on each slice of ham; add salt and pepper.
Serve immediately, still hot.
