Greedy Pennette
Ingredients
For 4 people - 400 g pennette - 100 g speck - 1 shallot - 3 tablespoons of olive oil - 1 tin of peeled tomatoes - Salt q.s. - Grated pecorino q.s.
Process
Finely chop the shallot, fry it in olive oil, add the peeled tomatoes and some salt and cook over medium heat with the lid on for about 20 minutes.
Then add the speck cut into small pieces and cook for 5 minutes.
Cook the pasta al dente, drain and season with the sauce, sprinkle with grated pecorino and serve.
