  • PRODUCTION PROCESS

    The rind is removed, the product is cleaned, the fat is removed, then the product is pressed and brought to the right temperature for slicing (-8°/-10°C); then it is placed in trays. The trays are then labelled and both the product and packaging are checked. Last steps: packing into boxes and storage.

  • SENSORY CHARACTERISTICS

    Colour: the muscle mass is uniform red and the fat between the different muscle bundles is white.

    Taste: typical taste, mild and delicate.

    Smell: intense and characteristic.

  • INDICATIONS FOR USE

    Store at a temperature of + 2°/+ 4°C.

    Shelf life: 90 days. Leave the pack open for a few minutes before serving. Does not contain allergens.  GMOs: there are no ingredients originating in whole or in part from genetically modified organisms. Gluten free.

The cold cuts “Buon Montorsi” are available in different sizes 80gr (cured) and 100gr (cooked). The line “Buon Montorsi” represents the best part of the thigh (heart of prosciutto) the noblest part for the most demanding and refined palates. The particular care in selecting a raw material, the form and the aging in the richest zones of traditions are characteristics which create a mild and unique taste within this noble product. By steaming, we were able to achieve the highest quality of cooked version.
